Knox Vegan is run by local resident  volunteers - each contributing in different ways to help support the vibrant plant-based community here in Knoxville, TN.

Stacy Shepanek

Stacy went vegan in 2012, and that shift led her into advocacy work across the Southeast — organizing for Charleston Veggies and Vegans, co-founding the Charleston Plant dining guide, and running three vegan Mac Downs. She's now Director of Communications at Vegan Outreach. In her free time, she loves biking, climbing, hiking, weightlifting, and coffee.

Stacy believes in supporting local restaurants with strong vegan options — because the vegan in the group is often the one choosing where everyone eats, which means one thoughtful menu item can bring a whole table of new diners through the door. Stacy contributes to Knox Vegan by organizing local meetups and sharing on social media. 

Heather Mount

Heather went vegan in 2016 after watching the Netflix documentary Vegucated. They and their partner, Daniel, live in North Knoxville and enjoy hiking, biking, and exploring local restaurants. Heather is non-binary and uses they/them pronouns. Heather is the Director of Brand and Publishing at the Good Food Institute, a non-profit think tank working to make the global food system better for the planet, people, and animals. Heather contributes to Knox Vegan by managing the website, with their photography, and by sharing updates on our social feeds.
